The SCHUNCK Restaurant 5.0, Heerlen, Netherlands

The SCHUNCK is a Art Museum. (...and library, music school, theater, concert venue, and general cultural center.) And atop this museum (where Deanna will be showing her photographs next year) is a restaurant. While not vegan at all, the wonderful, witty, and happy chef is willing to whip something special up for you if you let him know...

I thought for a second he brought out cow tongue, but it was a white bean hummus stuffed bell pepper on a warm flour tortilla, over a salad of greens, beets, olives, and sundried tomatoes. There were also fried vegetable spring rolls with a special sweet cilantro dipping sauce. It was pretty... pretty good.

    I thought it was a crustacean!
